Sargol saffron is a type of saffron made from the red stigmas of the saffron flower. After harvesting, this type of saffron is dried and then separated into thin, individual strands. Sargol saffron is of high quality and has good coloring power, aroma, and flavor. This type of saffron is suitable for export and culinary uses.
Super Sargol saffron, due to its filamentous form, is easy to use and does not require grinding. This type of saffron can be used directly in dishes or dissolved in water before use. Super Sargol saffron is more expensive than other types of saffron. However, given the high quality of this type of saffron, it can be said that its price is reasonable. Super Sargol saffron is the most widely used and common type of saffron for public consumption, and consumers are more familiar with this variety.
Super Sargol saffron has different grades such as Premium, “Sar Ghalam” (tip of the style), and “Sar Rishe” (top of the thread). Outside Iran, it is called “All Red,” meaning completely red. In Super Sargol saffron, which is a pure saffron, the style (the white part of the saffron) is completely removed, and only the red part remains. This is why it is called “All Red.”
The grading and price of Super Sargol saffron vary depending on the thickness of the stigmas, whether they are fine or coarse, and the presence or absence of broken stigmas. Determining the quality of Sargol is a challenging task. The quality of saffron is assessed based on two criteria: the length of the stigmas and the presence or absence of white root fragments mixed with the stigmas, which have taken on a red color. It is graded from 1 to 3. The coloring strength of this Super Sargol saffron is very high due to its completely red nature, ranging approximately between 210 to 260 coloring units. This type of saffron commands a high price due to its separated stigmas, absence of roots, high coloring strength, and long stigma length.
